Fall & Winter Vegetable Gardens

In my last post I wrote about how to prepare a new raised bed to plant a fall vegetable garden. Now we will discuss what to plant for a fantastic fall and winter harvest.
I’ll start with a few tips for those of you who already have established beds. If you have a waning summer garden it’s time to do a little clean up to get ready for your fall and winter vegetable gardens. First assess the health of what you have growing. Those vegetables that have stopped production can be pulled out and composted, with the exception of a few that may produce again. Vegetables that may catch a second wind for production in fall include cucumbers, yellow squash, tomatoes, and zucchini. If these are looking a little piqued, but are still in relatively good shape with some production, groom them by removing brown leaves and dead stems, and continue caring for them as you have been.

Heat lovers like okra, eggplant, melons, and peppers should still be full production so give them a good feeding and plant around them. You can pull them out later when the cool temperatures begin bother them.
