Making Tomato Pie with Tomatoes from the Garden


Hi kids! This is our last activity for the year, so I thought I'd do a recipe using produce from the garden. In the video below I'll show you how to make one of my favorite summer recipes with tomatoes from the garden! How would you like to try some tomato pie?! 

Here's the recipe and video for you to follow along at home. 

Tomato Pie

  •  1 unbaked pie crust
  •  4-5 tomatoes, sliced
  •  1 teaspoon salt
  •  1/4 cup fresh basil leaves
  •  1/2 cup chopped white, yellow, or green onion
  •  2 cups grated cheddar, mozzarella, or colby jack cheese
  •  3/4 cup mayonnaise
  •  Freshly ground black pepper, to taste
  • Garlic powder, to taste
  • Hot sauce, to taste
  1. Place foil strips around the rim of a store bought pie crust &  then par-bake for 10 minutes at 375 degrees to help prevent against a soggy crust bottom once the tomatoes are added to it.
  2. Slice the sliced tomatoes and sprinkle with a little salt to draw out excess juices for  10-15, Press the slices with a spatula a bit to press out more juice.
  3. Alternate layers of sliced tomatoes with a mixture of the chopped onions, fresh basil leaves, and a little garlic, salt, and pepper.
  4. Top with a mixture of shredded cheese, hot sauce, and mayo.  
  5. Bake for 30 minutes in a 350 degree oven.  Take the foil from around the edges after about 15 minutes. The cheese will get all melted and start to brown on top and the crust edges should turn golden brown so you know it is done.
